I am working on some NEW pieces for PFATT and STJ as well as some magazine publications for next month so I will be busy for the next few weeks. I just wanted to let you know that I have Captain Jack's first mate available. He is really causing a rucus in the studio because everyone else has abandoned ship and found new homes and he is stuck here with me. So, he is ready to set sail.

Hello All,

Thinking of Fall

Hello All,

I hope you had an enjoyable Labor Day. My family and I spent the day at the fair. We had so much fun!! The children loved seeing all the animals especially the horses. The fairs always get me thinking of fall and all the fun that comes with Halloween. Where your imagination can go wild when creating pieces.

Let's see how many ghoulish words I can search for while I am waiting for Elaine to finish me up for PFatt on Sept. 10th. I know I can find some good ones.

What's New

Hello All,

It's the middle of August and the kiddies are headed back to school and I am busy in my studio working on Halloween pieces. I will post pics once I have them completed.

Menu Mondays

Hello All,

I know its been a minute since I last posted. I have been catching up on special orders. Come back and visit me on the 10th for some new pieces. But, here is my recipe for today.


Crispy Orange Beef

INGREDIENTS:
1 1/2 pounds beef top sirloin, thinly sliced
1/3 cup white sugar
1/3 cup rice wine vinegar
2 tablespoons frozen orange juice concentrate
1 teaspoon salt
1 tablespoon soy sauce
1 cup long grain rice
2 cups water
1/4 cup cornstarch
2 teaspoons orange zest
3 tablespoons grated fresh ginger
1 1/2 tablespoons minced garlic
8 broccoli florets, lightly steamed or blanched
2 cups oil for frying

DIRECTIONS:
Lay beef strips out in a single layer on a baking sheet lined with paper towels. Allow to dry in the refrigerator for 30 minutes. In a small bowl, mix together the sugar, rice vinegar, orange juice concentrate, salt and soy sauce. Set aside. Meanwhile, combine rice and water in a medium saucepan. Bring to a boil, then reduce heat to medium-low and simmer for 20 minutes, or until rice is tender. Add more water at the end if necessary. Heat oil in a wok over medium-high heat. Toss dried beef in cornstarch to coat. Fry in the hot oil in small batches until crispy and golden brown; set aside. Drain all of the oil from the wok except about 1 tablespoon. Add orange zest, ginger and garlic to the remaining oil, and cook briefly until fragrant. Add the soy sauce mixture to the wok, bring to a boil, and cook until thick and syrupy, about 5 minutes. Add beef, and heat through, stirring to coat. Serve immediately over steamed rice, and garnish with broccoli.

Michelangelo Buonarotti, the Renaissance sculptor and painter, is considered one of the world's greatest artists.
He was born in Tuscany in 1475. He apprenticed to a painter at age 13, infuriating his father, who considered art menial work.


By age 25, he had sculpted one of his finest works, the Pietà, in St. Peter's. Working alone, he took four years to paint more than 400 figures on the Sistine Chapel ceiling.

He also designed St. Peter's dome and is perhaps best known for his iconic statue of David. He died in 1564.

Dollar Deals and Menu Mondays

Hello All,


I hope your had a great weekend. I was trying to stay dry with all the rain we got over the weekend. The sooth my raining day blues I decided to venture out and do a bit of thrifting. I was so excited when I found this piece. I just fell in love with I saw it. You won't believe what I paid for it. It was marked for $15 but once I got to the register. The cashier information that the special promotion tag for that day was the same as the tag on my wonderful piece. So my grand total was $1 dollar. Woo Hoo!!!! Man, was I excited!! I will be putting her in my office. I added the tiara.

Okay, I haven't forgotten about Menu Mondays. I just wanted to update you on a few things. Remember to see a few new designs on PFATT Marketplace on March 10th as well as on my blog. Just click on the link located in the upper right hand corner of my blog. I am thinking spring and will have alot more pieces available in the upcoming weeks.

Now, onto the recipe. I was thinking with the raining weather that something warm and soothing would be great. So how about some slow cook soup. Give it a try and let me know how you like it.

Slow Cooker Creamy Potato Soup

"This is a very rich and creamy soup. A great family favorite. It may be cooked on the stove or in a slow cooker. Garnish with chives, if desired."

PREP TIME 30 Min
COOK TIME 6 Hrs 30 Min
READY IN 7 Hrs

INGREDIENTS:

6 slices bacon, cut into 1/2 inch pieces
1 onion, finely chopped
2 (10.5 ounce) cans condensed chicken broth
2 cups water
5 large potatoes, diced
1/2 teaspoon salt
1/2 teaspoon dried dill weed
1/2 teaspoon ground white pepper
1/2 cup all-purpose flour
2 cups half-and-half cream
1 (12 fluid ounce) can evaporated milk

DIRECTIONS:

Place bacon and onion in a large, deep skillet. Cook over medium-high heat until bacon is evenly brown and onions are soft. Drain off excess grease. Transfer the bacon and onion to a slow cooker, and stir in chicken broth, water, potatoes, salt, dill weed, and white pepper. Cover, and cook on Low 6 to 7 hours, stirring occasionally. In a small bowl, whisk together the flour and half-and-half. Stir into the soup along with the evaporated milk. Cover, and cook another 30 minutes before serving.

Menu Mondays

Hello and Happy Monday,

I am busy working on some new designs so I will just share my menu with you for this week. Give it a try and let me know what you think.

Orange Rosemary Chicken

"It's fabulous hot or cold. I make a big batch so there are leftovers (which make tasty quesadillas). I move my oven rack to a lower setting to keep the chicken moist, and even then it barely takes 30 minutes."

INGREDIENTS:
1 1/2 cups orange juice
1/4 cup olive oil
1/4 cup chopped fresh chives
3 tablespoons chopped fresh rosemary
1 teaspoon salt
1 teaspoon ground black pepper
1 (2.5 pound) whole chicken, cut into 8 pieces

DIRECTIONS:

In a medium bowl, mix the orange juice, olive oil, chives, rosemary, salt, and pepper. Place the chicken in the mixture. Cover and marinate in the refrigerator at least 4 hours. Preheat the oven broiler. Arrange the chicken on a baking sheet. Broil 30 minutes in the preheated oven, 6 to 8 inches from heat. Turn and brush frequently with the remaining marinade mixture, until no longer pink and juices run clear.

Menu Mondays


Hooray and Happy Monday to you!!


I am so excited that the weather is warming up and the sun is shining bright. Okay, Valentines day is just around the corner I hope you have some sweets for your sweetie. If not, try making this Chocolaty goodness. I am sure they will love for it!!


Chocolate Cheesecake II
"Chocolaty goodness in a cheesecake!"


INGREDIENTS:
1 1/2 cups chocolate cookie crumbs

2 tablespoons white sugar

1/4 cup butter, melted

1/4 cup semisweet chocolate chips

1/4 cup heavy whipping cream

3 (8 ounce) packages cream cheese, softened

1 cup white sugar

1/3 cup unsweetened cocoa powder

3 eggs 1 teaspoon vanilla extract

1 1/2 cups semisweet chocolate chips

1/4 cup heavy whipping cream

1 teaspoon vanilla extract

DIRECTIONS:
Preheat oven to 350 degrees F ( 175 degrees C). Lightly grease a 9 inch springform pan.

In a small bowl, mix together 1 1/2 cups chocolate wafer crumbs, 2 tablespoons sugar, and melted butter. Press onto the bottom and 1 1/2 inch up the sides of the prepared 9 inch springform pan. Bake at 350 degrees F (175 degrees C) for 10 minutes. Allow to cool. Reduce oven temperature to 325 degrees F (165 degrees C).


To Make Filling: In a small saucepan, heat 1/4 cup whipping cream and 1/4 cup chocolate chips, stirring constantly, until chips are melted. Remove from heat. In a large mixing bowl, beat cream cheese and 1 cup of sugar until smooth. Add cocoa and beat well. Add eggs and beat on low until just blended. Stir in 1 teaspoon vanilla and reserved chocolate mixture until blended. Pour over crust. Bake at 325 degrees F (165 degrees C) for 45 to 50 minutes or until center is almost set.


To Make Topping: In a small saucepan, heat 1/4 cup whipping cream and 1 teaspoon vanilla until just before boiling. Stir constantly and be careful not to boil over. Have 1 1/2 cups chocolate chips ready in a small bowl. Pour in the hot cream and stir with a spoon until smooth. Spread over baked cheesecake and refrigerate overnight.

Menu Mondays

Hello All,



Okay I have a dish for you today to really fill your stomach. I love southern cooking and my favorite foodnetwork cook is Paula Dean. She is the best to me when it come to down home cooking. Well, this dish isn't from her but I think it has a southern flair. Give it a try:



Black Skillet Beef With Greens and Red Potatoes Recipe

Ingredients:

1 pounds beef, top round steak
1 tablespoon paprik
1 1/2 teaspoon oregano
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon pepper, black
1/8 teaspoon pepper, red ground
1/8 teaspoon mustard, dry
8 potato(es), red, halved
3 cup(s) onion(s), finely chopped
2 cup(s) broth, beef
2 clove(s) garlic, minced
2 large carrot(s), peeled, cut into very thin, 2 1/2-inch strips
2 bunch(es) mustard greens, (or kale or turnip greens) stems removed, coarsely torn


Preparation:

1. Partially freeze beef. Thinly slice across grain into long strips 1/8-inch thick and 3 inches wide.
2. Combine paprika, oregano, chili powder, garlic powder, black pepper, red pepper, and dry mustard. Coat strips of meat with spice mixture.

3. Spray large, heavy skillet with nonstick coating. Preheat pan over high heat. Add meat and cook, stirring, for five minutes. Then add potatoes, onion, broth, and garlic, and cook covered over medium heat for 20 minutes. Stir in carrots, lay greens over top, and cook covered until carrots are tender, about 15 minutes.

4. Serve in large serving bowl with crusty bread for dunking.

Menu Mondays

Hello and Happy Monday,

Do I have any football fans out there. Well in honor of SuperBowl Sunday coming up I would share a recipe for some also wings. I found this recipe on allrecipes.com How about hot, crispy, and ready to set your mouth ablaze, chicken wings are a game day staple. But not every wing recipe needs to set off the fire alarm--sweet and sour, garlic, Cajun, and original Buffalo-style sauces all taste great. Just pick your favorite flavor, make a few tasty dips, and break out the napkins.

BBQ Chicken Wings

PREP TIME 15 Min
COOK TIME 45 Min
READY IN 9 Hrs

INGREDIENTS:

1/2 cup teriyaki sauce 1 cup oyster sauce
1/4 cup soy sauce
1/4 cup ketchup
2 tablespoons garlic powder
1/4 cup gin
2 dashes liquid smoke flavoring
1/2 cup white sugar
1 1/2 pounds chicken wings, separated at joints, tips discarded
1/4 cup honey

DIRECTIONS:

In a large bowl, mix the teriyaki sauce, oyster sauce, soy sauce, ketchup, garlic powder, gin, liquid smoke, and sugar. Place the chicken wings in the bowl, cover, and marinate in the refrigerator 8 hours or overnight. Preheat the grill for low heat. Lightly oil the grill grate. Arrange chicken on the grill, and discard the marinade. Grill the chicken wings on one side for 20 minutes, then turn and brush with honey. Continue grilling 25 minutes, or until juices run clear.

Menu Mondays

Happy Monday All,

Well, are you all thawed out yet? It seems this past week the East Coast was nothing but frigid temperatures and tons of snow. We got over 12 inches and it seemed to not stop falling. I found a dish to help you take the chill out of January. How about a big bowl of stew! Nothing like stew to warm you up on those chilly January days. Now, if you are on the West Coast this is still a great dish to try out as well. This dish offers a nice twist on stews and also help stretch your dollar at the table. Just add the meat and a few basic vegetables for an easy, satisfying dish.



Kielbasa Skillet Stew



PREP TIME 20 Min
COOK TIME 45 Min
READY IN 1 Hr 5 Min

INGREDIENTS :

5 bacon strips


1 medium onion, chopped


1 pound smoked kielbasa sausage, thinly sliced


2 (15.5 ounce) cans great Northern beans, undrained


2 (8 ounce) cans tomato sauce


1 (4 ounce) can chopped green chilies


2 medium carrots, thinly sliced


1/2 medium green pepper, chopped


1/2 teaspoon Italian seasoning


1/2 teaspoon dried thyme

1/8 teaspoon pepper




DIRECTIONS:



In a 12-in. skillet, cook bacon until crisp; remove to paper towel to drain.
In drippings, cook onion and sausage until the onion is tender; drain.
Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 45 minutes or until vegetables are tender, stirring occasionally. Crumble bacon and sprinkle on top.
